Hot Sauce Mexican Roasted Pork Loin

Roasted Pork Loin

Materials

2 pork loins (not tender loins)

1 pack of bacon thin preferred but whatever you like

One small bag of frozen mango or pineapple

1 bottle Texas Butter® hot sauce

1 cup white rice

I can of Mexicorn®

2 cups chicken broth

4 cloves of fresh garlic minced

Hand full of chopped up cilantro

2 teaspoons of salt or to your taste

¼ cup Texas Butter® rub

Deep casserole pan with lid that can go in heated oven

Tools

Deep casserole dish

Knife

Aluminum foil

Bowl

Oven

Rice Prep

Drain fluid from Mexicorn® and mix with chicken broth, rice and 1/3 of the cilantro, ½ of the garlic. Set aside.

Meat Prep

This is a tedious task but well worth it! Fillet the pork loin by cutting a slit in the side and turning slightly as you continue to cut it with the grain. About ½ thick are the results we are looking for and the tenderloin being flat and rectangular in shape. Next leave the pork loin flat on cutting board put plastic over meat and pound it out with your meat mallet till it’s about ¼ inch thick. Results will vary don’t sweat it.

Now sprinkle Texas Butter® rub, 1/3 cilantro and rest of garlic. Here is where you have your choice in your preferred taste. Our combination is as follows: slather mango Texas Butter® hot sauce with the frozen pineapple chunks all over the flattened pork loin. Be liberal because a lot of the liquid will squish out. With the grain roll the flattened loin up to where the shape is the same as when you bought it. Told you it would squish out right?

Still with me? With the seam of the roll pointing up wrap your bacon around the loin securing with toothpicks along the way. We are looking for a uniform 1 layer all the way down the pork loin like hiding the pork loin.

Cooking Instructions

Take your rice, Mexicorn®, chicken broth mixture and pour it evenly in your deep tray. Carefully place the two loins on top of that and cover with aluminum foil or flame proof lid. Place the masterpiece in a 300 degree oven for 1hr 15min. After that time very carefully take the top off and bake open for an additional 20min.

Last but not least pull pan from oven and let sit about 15min. You can either carve now (against grain) on cutting board or carve at table. We cut about 1 inch thick slices. Lastly sprinkle remaining fresh cut cilantro over everything!

Ingredients
1/14 cups-      water

3 tablespoons- Coriander powder

2 tablespoons- cumin powder

10 gms-            ginger

11/kgs-            parwal scraped and cut into halves

6 tablespoons- mustard oil

4 medium-       popatoes peeled and cut into 21/2 cm. pieces
(400 gms.)
2-bay leaves

11/2 teaspoons – turmeric powder

31/2 teaspoons – red chill powder

1 teaspoon      – garam masala powder

31/2 teaspoons – salt

1 tablespoons-    sugar

1tablespoon-ghee

Method:

1.    Gradually add ¼ cup water to coriander and cumin powders, blending into a smooth paste.

2.    Grind ginger into a paste.

3.    Group parwal into 2 batches. Heat oil in cooker for about 5 minutes. Lightly fry each batch and remove. In the same oil, lightly fry potatoes and remove.

4.    To the remaining oil in cooker, add bay leaves. Stir for a few seconds. Add coriander-cumin and ginger pastes, turmeric, chilli and garam masala powders, stir and fry for about 1 minute. Add parwal, potatoes, salt, sugar and remaining water (1cup) stir well.

5.    Close cooker, bring to full pressure on high. Remove cooker immediately from heat. Release pressure with slight lifting of vent weight. Open cooker.

6.    Pour ghee evenly over parwal curry. Serve hot.

One and half C of corn flakes (crushed 1/2 C.)

Half of the C- Bisquick Mix

Three-quarters teaspoon paprika
One-quarter teaspoon salt
One-quarter teaspoon pepper
A lb boneless chicken breast and skin, reduced tariff in one piece
One tablespoon vegetable oil

Method:

Mix all ingredients in a bag. Shake bag to mix it all together. Put these pieces in the microwave one after the other separately. Wrap with waxed paper. Turn the microwave for three minutes. Turn the antenna half. Again on the microwave for three minutes. Check the antenna for the color pink in the middle.

* Shellfish 300grams.
* Caltrop strength.
* A red chili.
* The chili sauce.
* Three leaves of lettuce.
* A tablespoon of wine, grated shallot and fish sauce.
* One-half tablespoon grated garlic.
* A little pepper.
* A cup self raising powder.
* Cup of coconut milk.
* ½ cup water.
* 2 tablespoons of cooking oil.

Method of preparation:

1. Wash mussels and scaled cooked until about 3 minutes. Wash the leaves of lettuce with boiled water, drain, and arrange them on the record.
2. Mix ingredients not. 9,10,11,12 well and cover it with a damp cloth for20 minutes. Make a smooth paste of boiled oil.
3. Brush shellfish by caltrop strength, dip into the paste made above. Fry is deeply until it is crispy. Order it over leaves of lettuce.
4. Serve with chili sauce.
